Chef Roberto is a highly experienced culinary consultant specializing in restaurant setup, menu engineering, product development, kitchen operations, and culinary workforce training. With extensive experience in both standalone restaurants and large-scale cloud kitchen operations, he helps food businesses build efficient systems, profitable menus, scalable concepts, and high-performing kitchen teams.

Driven by a passion for food and innovation, Chef Roberto has been immersed in the culinary industry since the age of 16. Raised by his grandmother, he developed a deep appreciation for authentic Asian and Spanish cuisine, which became the foundation of his culinary identity. While continuing his studies, he worked his way through professional kitchens as a line cook, gaining hands-on experience and discipline from an early age.

After moving to the United Arab Emirates, Chef Roberto further advanced his culinary education at the International Centre for Culinary Arts (ICCA) Dubai and went on to refine his expertise across multiple high-level culinary positions — from Pastry Chef to Head Chef. He holds a Bachelor of Science in International Culinary Management, major in Kitchen Operations, from Lyceum of the Philippines University – Batangas.

Throughout his career, Chef Roberto has held leadership roles in some of the UAE’s respected hospitality and food service companies. He served as Executive Chef of Mamatani Dubai, known for delivering authentic Emirati cuisine with modern culinary techniques, and Head Chef of Seventy One Café Abu Dhabi, specializing in traditional Emirati dishes blended with international and Arabic influences. He also worked as Senior Chef De Project at The Ritz-Carlton DIFC Dubai and Corporate Chef of Solterra Middle East.

Chef Roberto later became Executive Brand Chef at Kitopi Cloud Kitchen Dubai, where he managed and developed multiple international and regional brands including IHOP, Little Bangkok, Cali Poke, Bondi Sushi, Betty Bakes, Four Winters, Old El Paso, MrBeast Burger, Noodle House, Rock N Ramen, and many more. In addition, he successfully conceptualized and launched original food brands such as Lola Lita, a Filipino comfort food concept, and Big Boy Ramen, inspired by authentic Japanese flavors.

Most recently, Chef Roberto served as Executive Brand Development Chef at Bidfood Middle East, overseeing the Asian and Plant-Based categories, focusing on innovation, product development, market trends, and culinary solutions for the food service industry.

Today, Chef Roberto continues to provide professional consultancy services to restaurants, cloud kitchens, startups, and food entrepreneurs across the region. His expertise covers concept development, operational systems, menu profitability, culinary training, and transforming unskilled individuals into confident and capable kitchen professionals.
